Well, what the other person said is true… but confusing… my family eats ALL organically, so i no all about this stuff…
…. here’s the simple version… something that is organic, is not filled with harmful chemicals and preservatives. it is healthy like fruits and veggies, but not… with the same great tastes!!!!!

In order for land to be certified organic it must go through a transition period of 3 years where the grower must follow all the regulations but cannot market the crops as organic during the transition period. After 3 years the land is eligible for organic certification.
You can put any land into organic transition, it does not have to be fallowed for any period of time before going into transition to organic.
the transition period does a couple of things-it starts the clean up of the soil (which takes about 10 years for the land to really recover from chemical abuse) which allows the creatures that inhabit healthy soil to make a comeback.
This also gives the grower 3 years to learn how to do all the record keeping, source organic inputs and get used to growing organically-in other words it is a learning period.
