Get campus approval first. Then read up on organic gardening. Make sure you have lots of time to devote to the garden - You can make a club out of it so that the work can be split up among lots of people.

I would get in touch with your local Permaculture Association, they may be able to help you.
I am a member of the U.K. Association, and have heard of similar projects here.
Try Googling Permaculture
Good luck.

cool… yes get permission first.. then plan it well .. also plan it according to your area.. if you get lots of rain plant those kind that like rain.. if your area is dry - plant drought resistant plants - the reason being who will tend them over the summer when school is out?? so plant the kind of plants that wont need maintainance..

if your climate allows late fruit trees such as plums are excellent because they will produce fruit around the time the students are back in class in the fall.

are you wanting flowers or food or both?? again plan according to when students are around (unless its active in the summer too)..
and permaculture is great as mentioned above…

Get approval first. Once you have that. Make sure it’s fun. Do it with a couple of friends. You could even put fliers around campus inviting people who want to join. Then make sure you pick plants that don’t need an excessive amount of maintenance . Also pick good locations to plants things. Try and make the campus look nicer with you’re plants. I suggest you plant trees rather than smaller plants. The trees will stay there for along time and everyone will appreciate them when they mature even if you’re no longer there.

You will have to get permission to do this on campus. I know the grounds crew would be less than happy with you digging up lawn somewhere.

Get a faculty adviser. This will likely be much easier to do if you are doing this for credit. you should also enlist the help of a local organic farmer. The farmers market should get you contacts or

Have a plan. What will you plant? what will you need to do the job? What will you learn from this? What will you do with the produce?
Map out what you intend to do with the garden. By this I mean literally draw a map.

Than ask if you can dig up a part of campus.

Get a lot of buy-in from the students first.

i think with my little experience the organic plants must get a real care to grow up like someone planted them in his own garden or house
