I’m pretty sure this is what they are, they start as small beatles that jump and then turn into flying ones. What are some organic ways to get RID of them, not just minimize them.

spray the plant on the bottom of the leaves with a strong jet of water from the garden hose.

Malathion does great, easy to mix and spry with virtually any sprayer… Or you can use mild soap instead 2-3 drips of dish soap to 32 ounces of water, mix well and spray where you see aphids eating

Aphids are soft bodied, green(sometimes brownish) insects that do not jump or fly. They are generally found on the undersides or growing points of plants. They give birth to live young, so you will see a variety of sizes. They tend to make the leaves of plants looked distorted and malformed. They suck fluids from the leaves, they do not eat holes in leaves. It does not sound like you have aphids based on your description. But, Malathion is a good insecticide, though you will find it does smell bad! Also, Sevin is good.

Aphids and other pests are best managed by attracting other insects that eat them. Plant flowers along with your vegetables. Tansy is one that works well. Also marigolds. If you have a spider population encourage them to stay in your garden or try relocating them there from you house. Aphids are a favorite food of ladybugs, which you can actually buy. You can also spray the plants with pyrethrin which is made from geraniums and relatively non-toxic, however, it will kill all the multi-legged critters.

Aphids are NOT beetles, they are the larva of the grass fly. They are soft bodied and do not jump or fly. Sound like you have leaf hoppers.

Attract beneficial insects int your garden to control the pests as this is the most organic way to go.

Malathion is not organic in anyway shape or for, nor is Dawn detergent
