I have a huge ( about 2 1/2 foot cabbage including outer bottom leaves in my garden. I have been breaking off the lower leaves,( about one and 1/2 foot each ) and throwing them away to let my lettuce get more sun. It’s organic. Can I shred it and use it? And if so, ??? How would I cook it???

You could eat them but they would not have the good crunchy texture of the inner leaves… If you really want to use them try cabbage soup… i don’t see anything wrong with it, and they have lots of recipes for it online. congrats on the huge plant!
